When conditions are just right, the sap flows! When Jan checked the collection barrel one morning, she found it nearly overflowing! 

When the sap barrels are full, teams of people are deployed to empty them.  Here you see Dave priming a small pump that will power the sap from the barrel into larger gathering tanks.
